Join Me On My 10K Journey | Part 6

Welcome to Part 5 of my 10k training journey! This one is jam packed with positive vibes, good food and fun run photos!

I’m still following the 5k to 10k training programme, but have also been doing some free runs on days where my body is tired or I don’t have much time. I’ve found some nice areas to run in where I live, so have been mixing up my route a bit.

This week saw a complete overhaul in my diet. I was letting naughty, little snacks enter my body daily and I wasn’t feeling very good about myself. Of course, I still allow myself treats – just not as many as I was having! As mentioned in my last post, I have started a new Instagram account completely dedicated to my fitness, food and training. You can find it at

Here are some photos of the food I have been enjoying this week.

Baked eggs in chopped tomatoes, topped with cheese. Lots of chilli included!

Avocado, Spiced Tofu, Kale and Sweet Potato Chips

Vegetable Patties and Micro Grains (chickpeas, quinoa and lots of veg)
Avocado, Franks Extra Hot Sauce, Meridian Peanut Butter on top of a Food Doctor Pitta with chilli flakes

As part of my journey, I have also been working on my confidence, especially that to do with my body. I’ve never liked how I look or how my body is shaped, but now I’m at the grand old age of 30, I realise it’s about time I stop wasting time worrying about it and start doing something about it! My body is slowly changing with all the running and healthy eating and this alone gives me a massive boost. Running releases all those happy hormones and endorphins and the feeling is addictive. I also treated myself to a new pair of jeans, which I’m obsessed with!

Here’s for another exciting bit – Mum and I took part in Colour5k yesterday! It was such a brilliant afternoon and I loved crossing the finish line with Mum. Getting a medal was also a lovely bonus! I think I may have Mum hooked on taking part in these events now, so hopefully there will be lots more to come!

What an amazing week! I’m feeling extra positive about the week ahead. Have a good one!

Join Me On My 10K Journey | Part 5

With the 10k less than 5 weeks away, I have to be honest and say that I’m feeling more than a little bit anxious. In fact, I’m in full on panic mode. Yes, I’m running for longer, further and faster than I ever have before but I’m still slower than every other runner I know, I still almost die when I run over 5k and I still have a full on tantrum when it gets too hot. Help me!

I also feel that 10k is viewed on by some people as a not decent enough distance. But what I want to stress (to those of you who do think that) is that it is A BIG DEAL TO ME. I have my own personal barriers that I fight each and every time I go out for training – confidence and a fear of people laughing at me, terrified that I’ll be attacked and scarred by a dog again, stressed that I’ll be slower than last time, guilt over leaving my baby and husband for 50 minutes and many more. No, I’m not looking for sympathy, just a bit of understanding. I’m also not saying that if you don’t sponsor me you’re not supportive. Just some words of encouragement would be nice, instead of denying all knowledge of me doing this and saying nothing – which to my amazement a lot of people are doing!

Anyway, enough of the moody stuff. I have had to think about extending my running courses now as I have to run for longer periods of time. My husband took me to Eaton Park, Norwich the other weekend and it was lovely. It was nice to run amongst the greenery and also a lot of other runners.

Next weekend is the Norwich Colour 5k! I’m so bloody excited and even more excited to be running it with my mum. We’ve both been training hard and really want to enjoy this one. Plus I get a medal.

In other news, I have set up an Instagram account to help motivate me in my fitness and weight loss. If you’d like to take a follow it’s called

Los Antojitos – Scotch Bonnet Hot Sauce

Chilli is my favourite ingredient to add to most of my dishes. I always like to make my meals spicy, whether that be a bolognaise, lasagne, homemade burger or poached eggs on toast! You can imagine my excitement then when I was asked to write about Los Antojitos Scotch Bonnet hot sauce and salts.

PLEASE NOTE – In my highly professional way, I tried the sauce before I took photos of the bottle (I just couldn’t wait!) therefore there is less product in there – it was full!

Los Antojitos are a vegan Mexican food, pop-up catering company based in Manchester. They specialise mostly in Street Tacos and Multi-bean Chili bowls.

The company make their own hand pressed tortillas which they then load up with their yummy Mexican recipes.  These include BBQ Sweet Potato and Red Cabbage slaw, Seitan de Barbecoa Estilo Yucatan and Refried Pinto beans. Los Antojitos make sure to use organic ingredients wherever possible and also authentic ingredients, importing them from Mexico itself.

The sauces and salsas actually have their own cult following and I can see why. This sauce is addictive! I’ve already finished my bottle and I’m waiting for a re-stock so that I can buy myself some more. I was able to try the Scotch Bonnet hot sauce which was very spicy, but deliciously fruity at the same time. I poured it on everything – avocados, sweet potato chips, toast, mushrooms, vegetable patties – everything! The sauces were initially intended just for use in the pop up kitchens, but customers demanded bottles for use at home. Los Antojitos now has a large range of sauces, salsas and salts available for purchase. Find out the different ways to buy here.

Los Antojitos Market Stall

The chilli sauces have always been made from scratch because the chefs at Los Antojitos wanted make sure that they knew every ingredient that went into them. Their most popular sauce is this one – the Scotch Bonnet – followed by Arbol and Guajillo.

I will be writing another Los Antojitos post in the next couple of weeks where you will learn more about the company itself and the brilliant staff who work hard to keep it running smoothly. I will also be sharing the flavoured salts I received – one of which is a lime salt – perfect for Margaritas! Keep your eyes peeled.

Welcome to another Join me on my Journey post! This one is featuring a natural weight loss product by Sensilab called 10 Days Fast SlimSensilab are a company specialising in nutraceutical products, vitamin dietary supplements and cosmetics. I was lucky enough to be able to try their 10 day slimming plan and this post will fill you in with how I got on.

I’ve never tried weight loss supplements before as I’ve not always known what ingredients they contain. The 10 Days Fast Slim contains all natural ingredients which have been carefully chosen to help your body speed up the weight loss process, in a safe way.

In the pack you get –

  • 20 capsules A (Drainer), 20 capsules B (Glucose balance),  20 capsules C (Metabolism support)
  • A diet and workout guide
  • A pill box
  • E-mail support

As mentioned previously, there are 3 x 20 capsules each aiding weight loss in different ways. You have to take 2 of each capsule at different times of the day.

Capsule A – Drainer

These are to be taken after breakfast. They contain extracts of black radish, sarsaparilla, java tea and black pepper.

These ingredients help to –

  • Detoxify the whole body
  • Excrete excess water
  • Prepare the body for weight loss

Capsule B – Glucose Balance

These are to be taken after lunch and contain brown sea algae and cinnamon.

These ingredients help to –

  • Maintain good blood sugar levels
  • Break down fats after the meal
  • Decrease the absorption of fat
  • Increase the feeling of fullness

 Capsule C – Metabolism Support

These are to be taken after dinner. They contain extracts of artichokes, papayas, ginger, cayenne and black pepper and choline.

These ingredients help to –

  • Regulate your metabolism during the night and daytime
  • Break down fat stores
  • Digestion

To make sure you get the best results, it’s important to eat the right foods, as stated in the guide. You also need to do regular exercise. There is an exercise plan included in the guide too.

How did I get on?

Well, I followed my usual eating plan – which consists of a lot of vegan/vegetarian foods, clean foods, very low sugar and gluten, etc. I just find that eating like this works well for me and I love eating foods like sweet potatoes and avocados! I had gone off track recently and was following another diet plan which meant I wasn’t really looking at what I was eating and was just eating foods that fit into my ‘points value’.

In terms of exercise I have been walking with the pram and running in the evenings. I just love running! It’s my bit of ‘me time’ where I can enjoy the fresh air and listen to my favourite (cringey) music.

What was my total weight loss on the Sensilab 10 Days Fast Slim plan?

4lbs! Or 1.84kg

I’m very, very pleased with this weight loss. Not only  did I lose a few pounds, I also just feel less sluggish and bloated. It’s nice to know that natural ingredients have played a part in my weight loss too, with no nasties involved.

A Happy, Healthy Pancake Day featuring DYLON

Do you like my apron? I fancied doing a bit of tie dye this weekend and produced this beauty! As Pancake Day is quickly approaching, I also thought I’d share a tasty and alternative pancake recipe with you.

To create this apron I used fabulous DYLON dye in the colour Intense Violet. It was so much fun and easy to do. Baby J sat and watched me do it and was very excited to see the results! I may have also tie dyed some of her vests too…

I followed a very easy tie dye tutorial which you can find here, it shows you how to achieve the different patterns too.

And now for the cooking part!

Squeaky Clean Blueberry Pancakes

Ingredients –

  • 1 Egg
  • 1 Banana
  • 25g Rolled Oats
  • 1Tbsp Coconut Oil
  • Handful of Blueberries
  • Sprinkle of Cinnamon
  1. Place the eggs, banana, oats and cinnamon in a blender and blend until smooth. You can also do this step with just a bowl and fork – just mush it all together.
  2. Melt the coconut oil in a frying pan
  3. Make little pools of pancake mixture in the pan for mini pancakes, or just make one big one!
  4. Let the pancakes cook for about 30 seconds over a medium-high heat and then plop some blueberries onto the pancakes.
  5. Flip the pancakes when they’re ready to cook the other side.
  6. Serve with Greek yogurt or creme fraiche

Easy isn’t it? These taste amazing, even if you’re not a banana fan like me, they don’t taste overly of banana.

I will be doing another tie dye post soon using DYLON dyes again – it’ll be a pair of canvas pumps! Keep your eyes peeled for that one!

Join Me On My Journey – Week 2

Yesterday brought the end to another successful week on my journey. I’m feeling so positive, it’s fantastic! My skin is glowing and my mind is full of positive thoughts – including a much more positive view of my body.

I have focused a lot this week on walking. I have been taking advantage of the features on my FitBit app and enjoying some challenges with my mum and friend Emily, which have really spurred me on. The best thing about all the walks is the quality time I have been able to spend with my lovely Jessica. I have loved pushing her pram and discovering what’s around where we live. The FitBit app has also introduced some brilliant challenges where you can travel around beauty spots in the North American state of Yosemite. The further you walk, the more sights you unlock. I have completed all the challenges now (15,000, 24,000 and 42,000 step ones) but will be doing them again this week.

I have also continued with my running training. It will really be stepping up a gear this week – which both excites and terrifies me! I’m very happy with how quickly my stamina has recovered and I’m hoping I can increase my distances this week.

Once again this week I have been enjoying some gorgeous food. I focused on recipes from the Hemsley and Hemsley ‘Eat Well’ book. My particular favourite was the Sausage and Cider Stew.

I also enjoyed some overnight cacao and hazelnut oats, which were a Deliciously Ella recipe. These are my new favourite breakfast!

My favourite lunch this week was tuna, boiled egg, chilli and avocado in a sourdough sandwich. So so good!

My discovery of the week was this gorgeous detox tea from M&S. I’ve been having it before bed and it’s been so comforting.

Right, now it’s confession time… I’m ashamed to admit that I purchased the ‘Lean in 15’ book by The Body Coach Joe Wicks. I’ve always found him so irritating, but I watched his one-off special show on Channel 4 and realised the results people have achieved on his advice are incredible! So today I have taken my ‘before’ photos and I’m hoping to see a difference in my shape in four weeks time. I will let you know!

This week I will be introducing HIIT into my daily fitness along with my running and walking. My food is all Lean in 15 inspired so we’ll see how it goes – make sure you check out the blog next week!

My Daily Greatness Training Journal has been fantastic – it has helped to keep me focused, made sure I drank lots of water, meditated and stretched before and after my runs. I have enjoyed reflecting on my daily achievements in the evening and thinking about what I want from the day and what I appreciate in life in the mornings. It’s not been about counting calories, weighing myself or studying every inch of my body. It’s been about appreciating what I have, reflecting on my choices and enjoying getting fit and healthy. I highly recommend getting one of these journals.

Thanks again for joining me and for your support. Here’s to another positive week!

Join Me On My Journey – Week 1

Well I’m ending this week on a real high. Yes it’s taken me longer to start this journey than I originally planned, but I can now comfortably say my heart is in it. Knowing that you guys are reading this too, really keeps me on track.

I have eaten some wonderful food this week – my favourite being my easy, but nutritional lunch of poached eggs and avocado on gluten free sourdough bread (with some chilli flakes thrown in!).

I also tried cauliflower rice for the first time and I have to say it was AMAZING. I mixed it with satay style Quorn pieces and sweet potato chunks. I didn’t get the best photo as I was too excited to eat it!

The week’s food has also consisted of: courgetti, Eat Natural bars, Nakd Salted Caramel Bites, protein shakes, Gosh bakes (give these a try, they’re gorgeous!) and a rocket and goat’s cheese frittata!

For exercise I have been following the first and beginning of the second week of the Couch to 5k app on my phone. It has been brilliant at building up my stamina again and I’m pretty pleased with how quickly my fitness is improving. I hope to be as fit as I was before pregnancy soon. Next week I will be introducing daily High Intensity training which I’ll go into more detail about in my next post.

Another benefit (among the many) to running, is that I have been able to explore my local area. We live on a brand new housing development, which is still in the process of being built. We are surrounded by beautiful fields and I have been lucky enough to run around them and take in the gorgeous surroundings. I do keep getting distracted by the views though!

I haven’t begun to fill out the daily sections of my Daily Greatness Training Journal yet, this starts tomorrow. I wanted to make sure I was fully devoted to my plan before I started the book. I’m ready now and I’m so excited. Next week I will be sharing some of my journal entries with you – I think you’ll love to see what’s inside and look at the beautiful page layouts.
As extra motivation I have also created a new Instagram account where I share food, exercise and beauty related pictures. You can find it at @sparkle.with.kerry – make sure you give me a follow! I’m following lots of other food and exercise lovers and I have seen some fantastic inspiration on there!

Well thank you for checking in on my progress. Any motivational comments are very welcome!

Join me on my Journey

Hi again everyone,

Tomorrow I am beginning my journey to ‘a rocking fit body, mind and spirit’. I bought myself a Daily Greatness Training Journal which claims it will help me better myself in all these areas in twelve weeks. I’m so excited to begin my journey and will be taking the time today to read my journal and fill out the beautiful pages in the front of the book.

I purchased this journal because I have felt seriously unfit since having baby Jessica and really needed some motivation. I haven’t just felt unfit physically, but also mentally. It’s easy to get into some naughty little habits when you’re at home with bubs all day and I’ve really been getting comfortable!

Before pregnancy I was a 5k runner and enjoyed eating healthily. I had very bad sickness all throughout my pregnancy so went off a lot of foods.  To be honest all I could cope with were wonderful carbs like bread and potatoes!

This was taken about a year ago when running was really paying off!

As part of my mission to get fit and healthy I will be taking up running again and using a Couch to 5k app to help me. This is what I did before and I really enjoyed using one. I love the use of technology to help keep me motivated. The various apps I have on my phone along with my FitBit, Garmin watch and training journal should definitely be enough to keep me happy!

I will be posting weekly about my journey, using this blog as a kind of open diary. I’d love for you to share any tips, advice and questions you may have about your own positive lifestyle changes and my own. I will also be sharing healthy recipes, which I’m really excited about! Trust me, I’m not a great cook, but if I can put together these recipes, then anyone can!

Thanks again for dropping by, please let me hear any motivational comments you can provide – I’ll need them! If you also wish to purchase one of these lovely journals (there are other types available, including a yoga one!) then you can do so here

My First Primal Snack Box

This morning the postman brought me this super parcel of amazingness!

This is my first ever Primal Snack Box, a paleo monthly subscription box. I opted for the Forest Box as I didn’t want any meat snacks. I really wasn’t disappointed when I looked at the contents.

I’ve been a big fan of Tea Pigs for a long time, so was excited to see this matcha tea sample – something I’ve been wanting to try recently. The box also came with a matcha truffles recipe card, so I’ll be using the the sample to make those. Blog post on those coming soon!

Nakd bars are one of my favourite snacks at work, and this is my favourite flavour too. Primal couldn’t have gone wrong with this one to be honest. They consist of just dates, cashews, raisins and some natural flavourings. So good!

Now these are intriguing! They’re made by a company called Cru8. Super excited to try these, I’m thinking of making a spicy guacamole style dip using an avocado, to dip them into.

Next up we have kale crisps by Leafy. I’ve heard amazing things about kale, but I’m yet to have eaten it in its pure form like this. Looking forward to snacking on these at work.

This is the Rawbite coconut bar. As you know, I love coconut so this will make me very happy! This contains dates, nuts (cashews and almonds) and coconut.

The apple and cinnamon bar is a yummy creation from Beond. It contains 1 of your 5 a day and is raw, vegan, gluten free, dairy free and soya free – yippee!

Here we have Sassy’s Red Velvet by Naturally Sassy. This is a cashew, coconut and pomegranate cake created by the awesome Saskia Gregson-Williams author of ‘Naturally Sassy’ which contains recipes without meat, wheat and dairy.

Ombar have created this heavenly dark chocolate coconut and vanilla bar. It is vegan friendly and made from raw cacao.

These are cocoa brownies by Healthbox. They are a tasty little mix of cocoa, nuts, dates and sea salt.

Finally, this product really excites me! It’s called Birch Water and is produced by Tapped. I am a sucker for the beautiful packaging. It claims to be ‘birch water, straight from the tree’ from the forests of Finland. They say the water is nature’s detox as it contains he antioxidant manganese.

I highly recommend the Primal Snack Box as you get a lot of lovely, healthy products from smaller food producers who look after the planet and create some tasty snacks.

Next blog post – a vlog of my daily ethical beauty routine. Don’t miss it!

10 Reasons why Coconut Oil is Awesome!

Today I’m sporting my very cool Deliciously Ella coconuts t shirt. This gave me the inspiration to write you lovely lot a post about why I think (and know!) coconut oil is awesome. Here are just 10 reasons, but there are hundreds more!

Peace, Love and Coconuts by Deliciously Ella
Peace, Love and Coconuts by Deliciously Ella
  1. Coconut oil is great to cook with. It has a very high boiling point and high smoke point so you can fry all your favourite foods in it. I fry my two-ingredient pancakes in it (blog post about that coming soon!) and also add it to many of my favourite vegetarian dishes like chilli con carne!
  2. It is brilliant for conditioning your hair. If your hair is dry and brittle, or just needs a boost, add coconut oil from the roots to tips and leave it on for as long as you can. Make sure you wash the oil out carefully and thoroughly, condition your hair and you will definitely see a difference.
  3. Coconut oil is a fantastic moisturiser. Rub it into dry patches on your face or body and let the natural oils do their work. You’ll also smell lovely too!
  4. Replace all your butters and margarines with it. It is a lot more concentrated than most butters, so you need less of it. Putting it on your grainy toast in the mornings is a wonderful start to the day.
  5. Boost the nutrients in your smoothies. Add a tablespoon or so to your fruit smoothies each time for a boost to cholesterol fighting compounds, plus a delicious flavour. Recipes coming soon.
  6. It is a great, general, all-round beauty product. Use it as a mouthwash to help whiten teeth. Rub it into your nail cuticles to soften them and protect them from bacteria. Remove even waterproof eye make up with it by putting a small amount onto a cotton pad and rubbing the eyes gently. Reduce wrinkles by adding a small dab to problem areas. The list goes on!
  7. Coconut oil is fantastic in the bath. The aroma relaxes you and will leave your skin feeling very soft when you get out.
  8. Did you know you can also use coconut oil as a deodorant? Just rub some under your armpits after washing and let it do its natural thing to keep odours at bay.
  9. Coconut oil is a natural energy booster which will wake you up if you need a mid afternoon pick up, or after a workout. If combined with chia seeds, you’ll be feeling refreshed in no time. Mix a tablespoon of coconut oil with a tablespoon of chia seeds and eat them straight from the spoon.
  10. It’s an amazing popcorn coating. Pop organic corn in coconut oil and then drizzle with just a touch more melted coconut oil and some sea salt. Yummy!

There are many brands of coconut oil to buy, and they seem a little expensive at first. However, you don’t need much each time you cook as it is so concentrated and a little goes a long way. My favourite brand of oil is Lucy Bee Organic Coconut Oil which you can buy in Sainsbury’s, Booths and other independent health shops. Or go to Amazon and you’ll find many different options there. Lucy’s oil is fairtrade and organic so it is extra fantastic.

IMG_20150927_140125 Let me know in the comments if you have coconut oil and have any other interesting uses for it. I would also like to know if you are new to the product and how you are intending to use it.
